Here is a delicious recipe for veal paupiettes stuffed with button mushrooms.

Ingredients for 8 people:

  • 8 veal cutlets, 150 g each

For the stuffing:

  • 1 kg of pork loin
  • 40 g ofshallot
  • 15 g garlic
  • 20 g of parsley
  • 2 eggs
  • 1 cl of Madeira
  • 200 g button mushrooms
  • 30g butter
  • 1 tbsp. tablespoons of olive oil
  • Salt, freshly ground pepper

For the hunter sauce:

  • 40 g shallot
  • 400g button mushrooms
  • 30g butter
  • 2 cl of cognac
  • 10 cl of white wine
  • 40 cl of brown veal stock, tied
  • 20 g of tomato paste
  • 20 g parsley
  • 20 g oftarragon

Veal Paupiettes stuffed with button mushrooms

> Beat the veal cutlets.

For the stuffing:

> Cut the pork into small cubes.

> Peel and finely chop the shallots.

> Peel, degerm and chop the garlic.

> Wash, dry and chop the parsley.

> Weigh 16 g of salt and 2 g of pepper.

> Gather everything in a cap, add the eggs and season with the Madeira. Reserve in the fridge.

> Wash, dry and mince the mushrooms. In a saucepan, sauté them in the butter. Chop a third, then add all the mushrooms to the previous preparation.

> Assemble the paupiettes: place a little stuffing in the center of each cutlet, roll up and tie up so that the paupiettes do not open during cooking.

Preheat the oven to 180 ° C (th. 6).

> In a sauté pan, heat the olive oil, mark the paupiettes on all sides. Place them in an ovenproof dish then cover in the oven for 25 minutes.

Meanwhile, prepare the chasseur sauce:

> Peel and mince the shallots.

> Wash, dry and mince the mushrooms.

> In a frying pan, sweat the shallots and mushrooms in the butter.

> Flambé with cognac, then deglaze with white wine.

> Add the brown veal stock and add the tomato paste. Let reduce for 5 minutes.

> Wash, dry and chop the parsley and tarragon. Reserve.

> Check the doneness of the paupiettes before removing them from the oven.

> When preparing, add the chopped herbs to the sauce.

On plates, arrange the paupiettes drizzled with the chasseur sauce.
